I also made it with coconut sugar and yeah it was a bit sticky but I was able to work with it!

Yes, you can make it in a blender or food processor.

I followed this recipe except I used coconut palm sugar and my dough was so sticky I couldn’t roll it out or shape it. Any idea if the coconut sugar could be the problem?

I made these this past weekend with maple sugar yum. I did add some maple syrup too because dough was a little dry. Came out well.
