I have tested a cottage cheese pasta, but it curdles when I add it to a hot pan with pasta. Maybe the cashews would help with that, though? You’ll have to experiment and let us know if you try it. I’d probably start with a 1/4 cup of cottage cheese for a serving of pasta and see how it affects the flavor/texture.

This is one of my go to meals when I don’t have time to make a big meal. It’s so good and filling and so easy!!

Absolutely fantastic! Home Run! The only issue I had was mine was a little grainy and thick. Do you think it is because my blender isn’t powerful enough? I used a Ninja.

This sauce is really good! I have wasted a lot of cashews trying to find a good cashew sauce/cheese recipe. This one is very good and satisfying! It actually has a cheesy taste. It was easy to whip up. I like that it makes 6 servings. I used one serving (1/3 cup) sauce with 1 cup cooked buckwheat pasta. 1/3 cup was plenty for a serving!

Very tasty and quick to make

I made this tonight for dinner and oh my! It was so deelish!! This surprisingly tastes like “real” alfredo and I didn’t miss the cheese or cream. This is a great recipe and I’ll definitely be making it again.
